So Tara's blog got me thinking...I LOVE to share recipes with other women. When someone asks me for a recipe it is one of the highest compliments one could give me, that's just me. "Someone actually liked something I cooked enough to have it again and make it themselves? Happy day!"
So recently I have been wondering about why some women refuse to give out recipes. My stepmother is still wondering about the fudge recipe her grandmother gave to her that doesn't work. This was no accident for sure, my step mom is a wonderful cook and just knows that her grandmother messed it up on purpose. How sad that this recipe, and the memories that came of her making it all those years died with her. And when my step mom recently asked someone if they could exchange recipes sometime the person rudely said she "didn't have time for that sort of thing." So here's my challenge ladies...give out your "secret" recipe. You don't have to give it to me, but give someone the recipe that comforts you more than any other, or one that is just so delectable you just sigh at that first bite. I don't think any of my friends are like this but I had to get that one out. :)
More randomness...
Kaitlyn ate a corn dog for lunch today. I don't know why this is such a big deal, but to me it just is. I gave it to her, stick and all, and she daintily dipped it in ketchup and ate the entire thing. And then when we were in the car today she shouted "It's a truck!" Was that a sentence? Alright I will admit it came out more like "Eesh sha twuck!" but I knew what she meant. All these little things that are so huge right now. I will never get used to how sad it makes me. I know I should be excited, but something in me knows it will never be like this again.
Which brings me to my next topic, (hey I warned you it was random today) the next baby. Still no period and a negative HPT yesterday which makes me think there's no way because with K I took the same kind of test (the $ Tree ones) 2 days before my period was due and got a positive. I was supposed to start yesterday so I would think if I was pregnant I would get a positive by now. And somehow the obsession has died a little. Don't get me wrong we are still trying and I will be thrilled if I was but I am at peace knowing it is not my timing I should be concerned with.

2 cans of Eagle Brand condensed milk
1 pie crust
Cool Whip
Chocolate Chips and nuts
Remove all labels from milk cans. Do not open the cans. Boil the cans in water for 4-5 hours. I usually lean towards 4. While boiling, continue to check water depth. Add water as it evaporates to ensure the cans are covered. Let cans cool for 20-30 minutes. Do not open early or the caramelized milk will spew out. Open cans and pour caramel into pie crusts. Place in fridge to cool. Do not put cool whip on top until caramel has cooled. It will melt it. Top with any toppings. I use chocolate chips only, but many people add the nuts, too.
Hooters Wing Sauce Dip
Jar of Hooters Hot wing Sauce (I use medium - hot is really hot)
approx 1 lb of chicken breasts, boiled
1 packet of dry Ranch
3 blocks of cream cheese
After separating chicken into small pieces, combine all ingredients. You may not want to add the entire jar of sauce. I used probably 80%. It seems like too much to me. Place in casserole dish. Heat on 350 for 25-30 minutes or until warm. You may need to stir dip when you remove from oven. Serve with tortilla chips.
Beth’s Cheesy Chicken Casserole
4-6 chicken breast (cut or torn into small chunks)
¾ large block of Velveeta cheese
¾ bag No-Yolks wide egg noodles
1-2 cans Ro-Tel chilies and tomatoes (1=mild; 2=spicy)
1 green pepper finely chopped
1 small onion finely chopped
1 tube Ritz crackers
1 stick butter
Preheat oven to 375. Boil chicken until completely cooked, remove chicken from water and place noodles in same. Boil noodles until soft. Sautee peppers and onions in small pan with a small amount of butter, salt and pepper. Cut or tear chicken. Drain water from noodles and add Velveeta cheese (cut into chunks), Ro-Tel chilies and tomatoes, onions, peppers, and chicken. Leave on stove until all cheese is melted and all ingredients are mixed together. Pour mixture into a 9 x 13 pan or large aluminum baking pan (like you were making lasagna - easy clean up). Cover with crushed Ritz crackers and butter. Bake at 375 for 40 minutes or until top is brown.
I think I found you through Tara. I'm sorry I don't have any secret recipes (I love to bake and all of my faves are from books or friends...I share what I know usually!). But I do have a toddler (she's 19m - and a 5 year old too, but that's an entirely other story) and I swear the toddler is recognizing colors. I know...impossible...she keeps saying something that sounds like "purple" and pointing to purple...really. I don't know, but I do think yours said "its a truck!" for sure...=)
Okay, sorry -- I just read Bethanne's recipes and forgot what I was going to say. I'm knee deep in drool over here!! Holy Hot Wing Dip, Batman!! I'm all over that!!!
